Steve and Bucky only had youthful bodies because they were mostly kept on ice for decades. Bucky was only thawed out for missions here and there. Once Steve went back in time to live out his life, he aged rather normally (maybe only a decade or so younger than he should have been). This seems to be the case for Isaiah, too. So, instead of 100, they're about the equivalent of 80 or 90.
