Batman: The Man Who Falls - Written by Denny O' Neil.

This is an origin story of how Bruce became Batman. It is included in the Batman Begins comic adaptation with a reprint of the must have “The Man Who Falls” by Denny O’ Neil. I really only got this one for the seminal "The Man Who Falls" piece, so if you want to skip this TPB go right ahead, but this is the only place to find "The Man Who Falls" story.

It is also included in th Batman: Secrets of the Batcave trade paperback which features other tales of Batman as well. See the link below for a review of this trade paperback.

Batman: Blind Justice - Written by Sam Hamm.

It goes into specific detail about Bruce's martial arts training and his training to become the world's best detective.

Also, the Many Deaths of the Batman tpb introduces us to those that trained Batman in other skills unrelated to combat. \:\)
