Those were the rules for those particular fights. If one of the combatants is unable to continue, even for a moment, they are forfeit. That is why Captain Amrvel says he cannot afford to be pinned down, even for a second.

Agreed. The stakes are high enough for them to actually say a prayer at the start there, it does make sense in the full context of the story....

I thought it was an appropriate ending and good use of Thors sheer experience and vastly greater combat ability, it wasn't often he was credited with the intelligence at this time.
