Hulk and Thor fans seem to have come to an understanding that BFR is not Thor's way of winning a fight against a rival - to save innocents maybe but not many think Thor would see this as a true victory. So What other ways can Thor use his powers to take down Hulk.

There has been a lot of 'if Thor wasn't playing around and used his full abilities 'statements recently so could I have some clarification of what Thor can do if he wasn't 'playing around' and what if anything Hulk could do to counter.

For example -could Thor , using the hammers energy absorption drain Hulk as Surfer does?

We have seen Surfer do it. So we know that he can do it, at least under certain circumstances. Unless the Hulk has developed resistance to this tactic, as we've seen him gain resistance to other things.
Thor has used a similar tactic against some foes (such as the Presence), but we don't know if the nature of his power will allow him to do it to the Hulk.
Something like an energy drain likely depends on many factors, including the drainer and the drainee.

My opinion is that BFR is the main option Thor passes on in fighting the Hulk. The VERY rarely used Godblast appears to require quite a bit of set-up. Without the sort of set-up he used against Galactus, Thor failed to put the Juggernaut down with a more hastily summoned Godblast. I'd say Galactus is far enough above Juggy (probably above Cytorrak) to show a distinct difference.
Godblast and BFR aside, I think most of the attacks Thor uses more rarely in battling the Hulk are similar in effectiveness to the tactics he does employ.
The reason the Hulk and Thor usually match up well against each other is that they are peers. It's got nothing to do with holding back on either side.
