No conventional comic writer would ever write this fight as involving super speed to any notable degree, so bringing that aspect into it isn't relevant. My own opinion is that Thor and Adam are physically close enough in strength and durability that what makes the difference in this fight are other factors - namely Adam's true flight and Thor's versatility - Mjolnir, energy projection, energy manipulation especially of a mystical bent, weather control, and vortexes. Thor's greater versatility carries this fight for him. Also, Thor has generally fared well against folks with power sets similar to Adam's: Hyperion, Gladiator, Captain Marvel (Billy Batson), and Count Nefaria.

Last two fights with Gladiator have an older Gladiator knocking Thor straight out or choking Jane Thor out.

Cap was only beaten because he called the lightning and Adam never does that.

So Adam would not use his speed but Thor who uses his versatility even less will?

Both those battles have to be seen in context. Gladiator surprised Thor and once he got the hammer and decided gladiator was a threat to innocents Thor quits holding back and literally makes him eat pavement. Thor beats the crud out of him the entire and decisive second round even Gladiator admits it to the Tomorrow man.
The second occurs when Jane knocks Gladiator down and naively stops to ask what is happening when he grabs her. A serious mistake for sure and that is the best thing I can say about that one.
