Seems plausible. I wish I was more interested in seeing Galactus in the MCU.

Why Count Nefaria?

To put it bluntly, Black Panther does not have the greatest rogue's gallery. Nefaria is a major Marvel villain who gains Superman-like powers. He'd be a suitable threat for the Black Panther universe.
I wonder if we'll continue to see Hydra in the movies or on TV. Right now it seems like no we won't. But I never expected SHIELD to get a sixth season so what do I know?

I like the idea of Carol fighting a herald of Galactus. As for Monica, I'm unsure. I never liked her powers. I don't like living energy beings.

My enthusiasm for this movie is slowly increasing.

Maybe Eternals will epically fail, but among all the announced Marvel movies so far, I think this one has the most potential. I'll see the Black Panther, Black Widow, Doctor Strange, and Shang-Chi movies, but I have the highest hopes for this one. It'll be the most different. Speaking of difference, Marvel is probably trying to get it out before DC can put out Kirby's companion New Gods, who are too similar.
Why Mephisto? Baron Mordo seems a given.

Mephisto is one of the biggest villains in Marvel who has yet to make an appearance in the MCU. He's certainly a bigger villain than Nightmare or D'Spayre or Umar, not that I'd mind any of them being the villain either.
I wish Marvel wouldn't do this - yet I believe they will.

I guess it might make more sense to have Doom in the FF film but not fight them directly, not yet, and have another villain like Annihilus be the main baddie initially.

Yeah, because Marvel too often wastes its villains by making them one and done. If Marvel were smart, it'd build up a roster of villains who can recur and have an Avengers film where they band together as the Masters of Evil. Just as all these heroes have their own films only to join together as Avengers. Villains should be established to join together as a truly intimidating force.
So you want more Asgard. Not me. I want a Thor in Space movie or nothing.

Well, Asgard is gone. I don't say anything about the setting being Asgard or New Asgard. I would set the story mostly across the Nine Worlds, not Earth.
