It is stated the prize is the combined power/knowledge of all the immortals within the last surviving immortal.

It is stated if one like the Kurgan gets the prize, mankind is doomed forever to darkness....

Connor gets the prize at the end of the first movie, he is now omniscient and telepathic but also MORTAL and can have kids????? Uhm....so an eternity of darkness if an evil one gets it, but a good immortal becomes mortal?? So what happens to all that power when the good one perishes? Do new immortals arise or is it gone for good?

    Makes no sense.

Maybe the power from "the prize" adapts to the user's desires. If you want ultimate power you got it. If you dream of a being mortal and having children you get that. If you want to lift mankind up to a golden age then you get the power to do that. Like if I got the "prize" I would just want you know...lots of shrimp. I really like shrimp.
