I get what you are saying but I think we were just supposed to assume that once Peter "lept" out of that timeline that his former self just finished the task as is. Basically, everything Peter did was what had already happened. He just doesn't remember being possessed by his future self for a few seconds. When you go back and read ASM #6 or one of those issues, let's just say that for one panel we ae looking at the future Spiderman. He can't change things because it already happened that way?
As for Doc Strange, that was a little odd sense at the end there were two of him. One was last in the time stream and the new one had no memory of anything. What I read from his comment was that now that he has tinkered with time he is vulnerable to having his time changed as well. Meaning, one of his enemies could go back and kill him as a child or something.
I hate time travel.
